Hello,
I'm trying to set a baseline as to what a maximum APC should be in regards to surfaces that come into contact with products made where I work that are consumed. They are not ready to eat products, and after a hygienic cleaning, the areas are rinsed with city water. I'm thinking that 500 CFU/mL would be appropriate, since that is the primary water standard and it is recommended by the EPA, but I have had other peers recommending higher limits. Does anyone have any thoughts on this, and what is your reasoning?
